She used to order two or three times a week… Princess Diana’s chef reveals her favorite dish

Princess Diana preferred simple and light dishes, and sweet peppers were one of those dishes that had a special place on her table, so much so that she asked her personal chef to prepare them two or three times a week.

A report published by the Eating Well website presents Princess Diana’s favorite chili recipe, its ingredients and cooking method, as told by her personal chef, Darren McGrady.

Darren McGrade, a chef who has worked in the kitchen of the British royal family for more than 15 years, has revealed that the stuffed sweet pepper recipe was one of Princess Diana’s favorite dishes.

“Sweet lung peppers were one of her favorite dishes,” McGrady said, adding that she “probably ate them two or three times a week.”

He explained that Princess Diana did not eat beef at all and would occasionally eat lamb when entertaining guests. Mostly along with fish he preferred vegetarian dishes like peppers and eggplant.

According to McGrady’s chili recipe, the ingredients are bell peppers, olive oil, onions, zucchini, mushrooms, oregano, salt and pepper, tomatoes, rice, water, chicken or vegetable stock, fresh basil, Parmesan, and mozzarella cheese.

A simple recipe with a summer flavor

One of the most important features of the recipe is its ease of preparation. McGrady also says there’s a nostalgic aspect to cooking it for her, as she says cooking this dish “always brings back happy memories.”

According to the method of preparation, the pepper is cut from the inside and baked in the oven, at the same time as the filling mixture is prepared on the stove.

After the filling is ready, place it in the pepper with cheese, then return the stuffed pepper to the oven for a few more minutes.

The recipe also uses summer vegetables like tomatoes and zucchini. Since the rice is directly included in the ingredients of the filling, the dish does not need an additional side dish.

A dish suitable for a weekday dinner

This chili recipe can be an easy addition to your regular dinner menu because it doesn’t take much time to prepare, its ingredients can be changed and other vegetables available in the market can be added.

For fans of Princess Diana’s recipes, McGrady also shared recipes for other favorite dishes, including baked potatoes, a salmon dish she asked her to make, and soaked oats that she loved.

McGrady previously spoke about Princess Diana’s love of fried potatoes, but she prepared them in a different way than the traditional recipe. He said he would coat the potatoes with egg whites and a little pepper, then bake them without adding any fat to give them a crispy crust and preserve the cooking method Diana preferred.

As for salmon, McGrady said Diana ate a lot, to the point where she ordered it two or three times a week. One of her favorite recipes is salmon topped with a crunchy coating of macadamia nuts, along with citrus, herbs and breadcrumbs. McGrady served it with boiled onions and sweet peppers, then added honey and orange juice.
